With Fall fully upon us now, it's officially time for comfort food! This one-dish Mediterranean chicken recipe (although super healthy) can definitely be classified as comfort food. This dish is packed full of delicious fresh vegetables and flavor, and it comes together easily in one dish for super easy clean-up; always my kind of meal!

It seems as though we went from zero to sixty when the school year started, with no chance of hitting the breaks in sight. I suppose it's always like that though, right? With everyone going in different directions during the week, dinner is the one steady that grounds us all around here, and brings us back together each night.
If your weekday schedule is as hectic as ours (fist bump - I totally empathize with you!) give this one-dish Mediterranean chicken a whirl. It's seriously so simple to put together - you may just be able to grab a few extra moments of "me time" (what?!) for a power nap or a manicure. Both sound dreamy to me right about now, friends....and the school year has only just begun.

This dish is really all about the fresh produce and the fresh Mediterranean pesto. My one super simple trick to keeping fresh vegetables on-hand (literally for weeks on end) year-round? One-Dish Mediterranean Chicken
Recipe yields: 4 servings
Prep time: 15 minutes
Bake time: 20-25 minutes
What you'll need:
- a 9"x11" baking dish
- a food processor/blender
- 4-6 boneless chicken thighs
- 1 lb. fresh asparagus (washed)
- 1/2 lb. rainbow cherry tomatoes
- 1/2 cup feta cheese
- 1/3 cup Parmesan cheese
- 2 tablespoon fresh rosemary leaves
- 1 tablespoon fresh summer savory leaves
- 1/2 tablespoon fresh thyme leaves
- 1 tablespoon fresh oregano leaves
- 1/2 cup fresh parsley
- 1/3 cup walnuts
- 1/3 cup olive oil
- 2 teaspoons capers
How to:
For the Mediterranean pesto:
- Start by chopping your parsley and walnuts.
- Once complete, add all of your ingredients to our food processor/blender, except for your olive oil. Set your olive oil to the side for a moment.
- Pulse the, 1/3 cup Parmesan cheese, 2 tablespoon fresh rosemary leaves, 1 tablespoon fresh summer savory leaves, 1/2 tablespoon fresh thyme leaves, 2 teaspoons capers, 1 tablespoon fresh oregano leaves, 1/2 cup fresh parsley, 1/3 cup walnuts until well combined.
- Now, slowly add your olive oil (about a teaspoon at a time) to your blender/food processor (pulsing as you go) until well combined / pesto is complete.
For the one-dish Mediterranean Chicken
- Preheat your oven to 425 degrees (F.)
- In a baking dish, evenly place your chicken thighs. Spoon 2 generous teaspoons of Mediterranean pesto on top of each chicken thigh (coating the tops completely).
- In a mixing bowl, add your fresh rainbow cherry tomatoes and asparagus, and the remaining Mediterranean pesto. Toss until evenly coated.
- Add fresh veggies to your baking dish, with your chicken thighs.
- Bake, uncovered for 20-25 minutes / until your chicken has an internal temperature of 165 degrees (F.).
- Remove from oven, and allow chicken to rest fr 10 minutes. Top with Feta cheese crumbles.
