One of the things that my daughter has missed most since going gluten-free, is Girl Scout Cookies. We've found ways to replicate many of her other fave baked treats with gluten free ingredients, but replicating Girl Scout cookie favorites, such as Samoa's, has proven to be a bit trickier. Until NOW!
This past weekend I concocted this recipe for Gluten-Free Samoa Pretzel Bites - they're a delicious gluten-free twist on one of our Girl Scout Cookie favorites. They were a BIG hit with everyone in our house too, not just with my daughter! My recipe below makes about 42 gluten-free Samoa Pretzel bites, for about $8 total.
They're perfect for enjoying as a special treat AND they're perfect for gifting too! Add them to a pretty tin with a bow, and gift them to friends and family this holiday season!

What you'll need:
Recipe yields: about 42 gluten-free Samoa Pretzel Bites
- a fork
- non-stick baking sheet
- a bag of gluten free square bite-size pretzels - if you can find squares you can substitute mini pretzel twists.
- a bag of bite size soft caramels
- milk chocolate squares - melted down (melt them down in 20 second intervals - use the defrost setting on your microwave - NOT high/regular heat)
- 1 1/2 cups coconut flakes.
How to:
- Preheat your oven to 350 degrees Fahrenheit.
- Spread 1 1/2 cups coconut flakes on your baking sheet evenly. Place in preheated oven for 15 minutes. Turn your coconut flakes every five minutes to prevent over-browning/burning. Coconut should be golden brown when toasted.
- Remove from the oven and set to the side on a dish.
- Next, arrange your pretzels on your cooled nonstick baking sheet.
- Unwrap your soft caramels if they are individually wrapped, and place/center each caramel on top of your pretzels that you've already prearranged on your baking sheet.
- Place a pretzel on top of each caramel - creating a sandwich of sorts.
- Place in your preheated oven for 10-15 minutes. Until the caramel is soft.
- Remove from oven - set baking on a heat-safe surface.
- Use the back of a fork to gently press the top pretzel down into the caramel.
- Set to the side to cool.
- Once your pretzel/caramels have cooled. Melt your milk chocolate down in the microwave in a microwave safe dish (use the defrost heat setting and microwave at 20 second intervals - stir chocolate with spoon every 20 seconds until chocolate is melted down to a smooth consistency.
- Individually, place each pretzel/caramel "sandwich" down into the chocolate (making sure it's covered entirely in chocolate) use a fork to retrieve each caramel / pretzel chocolate covered bite from the bowl. Shake the fork gently to remove any excess chocolate, and place on a wax paper lined baking sheet. Immediately top with a generous pinch of toasted coconut flakes. Repeat this process with each pretzel/caramel pretzel bite until they are all completed. Drizzle remaining melted chocolate over top of the coconut on each Samoa Pretzel bite, to complete.
- Allow chocolate to dry/harden (for 20-30 minutes) before serving / storing in an air tight container, or add to a decorative tin for gifting.
