Barbecuing is a huge part of my summer meal plan. I love to cookout in the afternoon or early evening, and save the house from the additional heat from the oven. To keep from getting stuck in a BBQ recipe rut, I've been testing out some new idea's in the kitchen. The results? Simple and delicious barbecue recipes, perfect for your next family barbecue!
All of our barbecues begin with Kingsford Charcoal. It's the best! It provides the most even heat that I've experienced with charcoal grilling, which means all of my prep efforts in the kitchen won't go to waste!
Bourbon Chipotle Barbecue Chicken Kebabs
Prep time: 20 minutes Cook time 20 minutes + 30 minutes for sauce
Recipe yields 4 servings / kebabs
Ingredients:
Kebabs
- 1 lb. of chicken cubed
- 2 red onions
Bourbon Chipotle Barbecue Sauce
- 2 tablespoons of unsalted butter
- 1 8 oz. bottle of store brought smoky/mesquite barbecue sauce
- 1/2 cup finely chopped onions
- 5 tablespoons bourbon
Steakhouse Barbecue Steak & Peppers Kebabs
Prep time: 20 minutes
Cook time 20 minutes
Recipe yields 4 servings / kebabs
Ingredients:
Chicken Kebabs
- 1 lb. beef cubes
- 3 green peppers
- 2 red onions
Assemble your beef cubes, red onions, and green peppers on your skewers. Set aside / refrigerate your completed kebabs.
Steakhouse Barbecue Sauce
- 1 c. of tomato ketchup
- 2 tbsp mustard
- 2 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- 2 tbsp
- 2 tbsp molasses
- 1 tbsp BBQ rub
- 1/2 tsp black pepper
Combine all of your ingredients in a medium saucepan. Bring to a boil. Reduce heat immediately. Cook on low heat for 30-40 minutes; your sauce will thicken/darken when it's finished. Use a silicone basting brush to apply the sauce liberally to your kebabs every 5 minutes, for the duration of the cook time (around 20 minutes).
Fruit Kebabs with Skinny Fruit Dip
Prep time: 10 minutes
Recipe yields 4 servings / fruit kebabs
Ingredients:
- 10 Raspberries
- 10 Blackberries
- 3-5 Mini donuts quartered or pound cake cubed
- 1 container of lite Cool Whip
- 1 8 oz. container of whipped fat free/reduced fat cream cheese
Fruit Kebabs
Rinse and dry your raspberries and blackberries. Quarter your mini-donuts or cube your store purchased pound cake. Layer your fruit and cake pieces on your skewers. Set your completed fruit kebabs aside/refrigerate.
Skinny Fruit Dip
Empty the entire container of Cool Whip and Cream cheese into a mixing bowl. Use a hand mixer on low for 1 minute to combine the ingredients until the consistency is smooth. Serve the skinny fruit dip in a small dish alongside your fruit kebabs.
