Wayfair Super Bowl Snack Off - World's Easiest BBQ Pulled Chicken & Mash Sliders


The day that Football fans anticipate all season is approaching quickly! Super Bowl Sunday is all about great food, great company and of course watching the big game.  Creating a fuss-free simple menu ensures that everyone has a great time!

I have the perfect no fuss recipe that will keep every one's hunger satisfied and you out of the kitchen with plenty of time to enjoy your guests and the game! Pulled BBQ chicken made with canned chunk white chicken breast [generally used for preparing chicken salad - can be found in the same area as the canned tuna fish in most grocers] with home style mashed potatoes on a whole wheat mini-bun. We refer to them as the World's Easiest BBQ Pulled Chicken & Mash Sliders. Total prep time is about 30 minutes. Cook time in the slow cooker about 1 hour.

What You'll Need:
[Homestyle Mashed Potatoes ]
1 Yellow Onion
1/2 Stick of Butter or Margarine
1 1/2 Cup Whole Milk [or cream]
1 Yellow Onion
5 Large Russet Potato's
3 tablespoons salt
1 table spoon pepper

[ World's Easiest Slow Cooker BBQ Pulled Chicken]
2 16 oz cans of chunk white chicken breast [ Makes 14-18 Sliders]
2 cups of barbecue sauce [ we used KC Masterpiece ]
1/3 cup water
2 Scallions
14-18 whole wheat dinner rolls [the small whole wheat dinner rolls pictured are from the Target bakery]


Prep For Easiest Slow cooker BBQ Pulled Chicken:
  • Dice 2 scallions and saute in 1 tablespoon butter [salt and pepper to taste].
  • Drain 2 16 oz cans of chunk white chicken breast
  • Pull the chicken chunks with a fork
  • Add chicken, 2 cups of barbecue sauce, scallions and 1/3 cup water to the slow cooker. Set slow cooker on high [total cook time 1 hour]. 
Prep For Homestyle Mashed Potatoes
  •  Slice and Saute Yellow Onion in 2 tablespoons butter [salt and pepper to taste].
  • Peel, cut and boil potato's for 25 minutes [cubing them helps to cook faster] then drain.
  • Add 1 1/2 cups milk 
  • Add 1/2 stick of butter 
  • Mash Potatoes with hand masher
  • Stir in Sauteed yellow onion
  • Add 3 tablespoons salt 
  • Add 1 tablespoon pepper

Slice your whole wheat mini [dinner] rolls in half and toast in the oven [at 350] for 5 minutes. Assemble sliders with 1 heaping tablespoon of home style mashed potato's and 1 heaping tablespoon of Pulled BBQ Chicken on each whole wheat mini roll .... Enjoy!
